Balla pastry shop was founded in 1972 by Umberto Balla who had the intuition of buying the patent of the ‘900 gourmet cake recipe from Ottavio Bertinotti, pastry master chef based in Ivrea. Umberto’s managerial skills, his wife Caterina’s friendly manners and their son Stefano’s ability are the long-lasting pillars of their pastry shop.
The second generation evolved with Stefano jealousy protecting the traditional recipe together with his wife Carmela and his two daughters Samanta and Francesca. This family business today is at its fourth generation and has wisely passed on all its specialized knowledge.
