The "Torta 900".
The “Torta 900” is the symbol of the patisserie. This cake was created at the end of the XIX century, from which it got its name, by the famous Ivrea confectioner Ottavio Bertinotti founder of the shop.
The history of "Torta 900".
Conscious of how unique the product was, the inventor of the cake decided to protect his creation with a special patent. The story tells that the recipe of the “Torta 900” (900 cake) was always kept secret and still is today! Mr Bertinotti was so jealous of it that he used to send everybody away while he was preparing the cream, so that nobody could steal his “sweet secret”. This secret was also kept by Umberto Balla’s family that in 1972 after about seven years of its creation took over the laboratory and the patent.

The perfect recipe of the Torta 900.
The cake is made of two layers of very soft and fluffy cocoa chocolate sponge, the result of a mixture of different flours; it is filled with a very delicate chocolate cream and decorated with a sprinkle of icing sugar. The sponge disks can have a variable diameter according to the customer’s needs; they are filled with the special cream only at the moment that the cake is ordered in order to guarantee the maximum freshness. The filling made of chocolate butter and cream is prepared when ordered by an team of confectioners managed by Stefano Balla, the only person to know the entire recipe.
A success that continues.
The success of the “Torta 900” (900 cake) is demonstrated not only by the constant number of people who buy the cake, but also by the number of legal procedures to stop the poor-
